Well, today we're going to try to get as many answers as we can for frequently asked questions. A bunch of trade shows have been canceled and everything, and they're doing virtual trade shows. We don't really know what that means or how it's going to work. And then all of a sudden I'm getting makeup on. All right — let's get started.

Should somebody getting into the business hire a consultant? And at what point should they hire a consultant?

Yes. Absolutely. Oh, definitely yes. You should hire a consultant. You should absolutely use a consultant, because the reality is, no one knows everything there is about opening a distillery unless they've done it before. So unless you're a mechanical engineer and you know how to design and do the piping and sizing for a distillery — hire a consultant.

They're going to save you so much time. They're going to save you so much money. They'll get you to your goal so much faster, more economically. It will save you money in the long run — even though it looks like a big expense up front, it isn't at all.

And I like the fact that they're with you in the beginning, and they're with you through the middle, and in the end, when everybody else is gone, they're there to help you start up and make a product and see it through.

Absolutely. And the reality is, even as you're going, they're going to be the ones who have done things like that before. Any issue you run into, they're going to be a great sounding board. They're going to know who to reach out to — particularly if you're running into zoning issues, compliance issues. If your brother took two semesters of architecture, so he's going to design your building... he's not an architect. They'll help smooth out all those issues.

You have to know the ins and outs of construction itself. You definitely need a consultant for the distilling industry — what process piping's going on, where it's going, boilers, chillers, stills, you name it. But I think you also need somebody that knows just the general work: electrician, drywall, windows — whether you're renovating a 100-year-old building like this one or starting from scratch. They'll definitely put you down the right track.

The devil is very much in the details, and there is so much. There's stuff here that on an almost daily basis, I'm like, "Oh dear — did not think of that." So if you're coming into it fresh with just a bag full of money, there's going to be a lot you don't know — and there are people out there who do know stuff.
